For awhile now I’ve been converting my favorite recipes that contain flour into gluten free (GF) options and I am so excited to share with you my GF version of these Parmesan Herb Baked Chicken Thighs! This is one of my go-to dishes because it’s simple, delicious and healthy! In the hopes of replicating these delicious chicken thighs into a GF alternative I purchased Ian’s Gluten Free Panko Breadcrumbs .
For this experiment I baked two batches: one with traditional Panko breadcrumbs and the other with Ian’s Gluten Free Original breadcrumbs. I must admit my expectations were low since I have experimented with other GF breadcrumb alternatives- most recently gluten free oats processed with herbs- but the results never give the satisfying crunch that one gets with traditional breadcrumbs.
But I was pleasantly surprised this time as I actually enjoyed the gluten free thighs better than the others! Never in a million years did I think I’d ever say that. But they were even more texturally satisfying than the panko and the best part- this brand is free of preservatives,artificial flavors and colors! I am a huge proponent of using whole foods to create my own fresh ingredients, but having GF breadcrumbs on hand is a huge time saver. I’m thrilled to have found a brand that is not only healthy but very satisfying.
On a plate combine the breadcrumbs, parsley, oregano, basil, garlic powder , salt , pepper and parmesan. Dip each chicken thigh into the butter and then into the bread crumb mixture; make sure to coat both sides.
Place all thighs in a covered baking pan. Bake for 20-30 minutes until chicken is cooked through and crumbs are golden and crispy.
Parmesan Herb Chicken Thighs
(Serves 4)
Ingredients:
4-6 Boneless, skinless chicken Thigh
1 Tbsp, Dried Parsley
1 Tbsp, Dried Oregano
1 Tbsp, Dried Basil
1 Tbsp, Garlic Powder
To taste, Sea Salt
To taste, Fresh ground black pepper
3-4 Tbsp, butter, melted
3 Tbsp, Grated Parmesan or any cheese of choice
4-8 oz, Panko Bread Crumbs
Process:
1. Preheat oven to 375 degrees F
2. Grease a baking pan with olive oil.
3. Place melted butter in a bowl.
4. On a plate combine the breadcrumbs, parsley, oregano, basil, garlic powder , salt , pepper and parmesan.
5. Dip each chicken thigh into the butter and then into the bread crumb mixture; make sure to coat both sides.
6. Place all thighs in a covered baking pan. Bake for 20-30 minutes until chicken is cooked through and crumbs are golden and crispy.
I cooked two packages of thighs in the oven at 375 degrees for about 50 minutes-1 hour and they were moist; oven times are variable. You can bake uncovered if you like.
